Eat on the Cheap- Butchering a Pork Loin

Hope you're all adapting well to daylight savings time... someone forgot to inform my boys so we up nice and early but we will be going to bed early too.
I hate losing that hour but it will be nice to have a little longer daylight in the evenings.

Today I thought I'd share one of my favorite ways to save money on food. With my boys getting bigger they are slowly starting to eat me out of house and home so I figure I better get used to making the most of grocery budget. When it comes to meat, a pork loin gives you a lot of bang for your buck especially if you are willing to put a little time into butchering your own. I've found the best deals at warehouse clubs and I got this one at Costco for $1.79/lb. You can usually find them there for between $1.50 and $2 a pound. The one below is just over 7 pounds.


On the back it has instructions on how to butcher this bad boy. A pork loin is a rib portion with bone and tender loin removed leaving the center loin and rib. There will be a layer of fat and "silverskin", which is the tough, stringy membrane. 


After I remove the packaging I rinse the loin off and place it onto my cutting board on a large sheet of freezer paper. You can choose to cut the loin into all chops, several loins, or whatever mix you prefer. For this one I decided I wanted a little variety so I could use it for different meals. We don't eat a ton of meat with each meal so figured I could do stir fry meat, 2 pork loin roasts, and pork chops. 
To begin, I removed most of the fat and what I could of the silverskin. Off of my 7.25lb loin, the fat and silverskin removed were about a quarter of a pound, so there isn't too much waste. I tossed mine but you could cook it up to make a flavorful stock. 
Next, off of the rib end (left side in the picture below), I cut off a pound which I then sliced thinly so I can use it for stir fry. Working from the left, I cut off a 1.75 pound section for a pork loin roast. Then I cut eleven 3/4" pork chops. I cut chops until I had enough left at the end for another 1.75 pork loin roast.

I separated everything into meal portions and put it into freezer bags. I split the pork chops up so I would have enough for two meals. So here are the number, the pork loin costs $13 and from it I got stir fry meat, 2 pork loin roasts, and eleven pork chops. With each meal making roughly 6 servings, that comes to about $.43 per serving. That's a pretty good deal for meat that will make a variety of meals.

I never make pork stir fry but since I have the meat I thought I'd give it a try. I found this recipe through Pinterest for Easy Garlic and Ginger Glazed Sticky Pork. The recipe was easy and delicious. I will definitely be making a pork stir fry again. The meat was tender and flavorful, and the glaze was just the right amount of sweet with heat. I served it with jasmine rice and steamed broccoli. This recipe was a winner!

Thursday Thoughts

Thursday is almost done which means the weekend is almost upon us. Hurray!! The only thing is that we've had such beautiful weather all week but now that the outlook for the weekend stinks. Don't you hate that?
I thought I'd just share a new segment, Thursday Thoughts. It's a random assortment of whatever strikes my fancy. 
Emmett just finished up swimming lessons and will be starting t-ball practice on Saturday. It's amazing to me how many activities there are for kids. From sports to the arts to outdoor activities, the possibilities seem endless. I don't remember ever playing team sports as a young child or taking much more than the occasional dance class but I guess that what comes with growing up in a small town. Kids around here have it good. There are so many activities to participate in that it makes me jealous that I didn't get to experience all this so I'm making sure that my boys do. They will have to focus on their favorites but I do want give them all that I wish I could have done. Just another reason I love living in Charleston. Has anyone else been watching Big Little Lies and what are your thoughts? I, personally, haven't been impressed. I feel like they're deviating a little too much and giving away important plot points too early. I realize they have to add and embellish to turn a 300 page book into a seven episode series but I'm disappointed so far. The last episode I didn't really even watch it. I just had it on in the background while I did other stuff. I haven't given up on it yet and I may go back and rewatch this past episode but seeing the previews for next week, with them Madeline, Jane, and Celeste googling Saxon together, I just don't know how this will work out. We shall see.







On the topic of television, I just binged watched Taboo and really enjoyed it. It's dark, dirty, bloody, and creepy which make it terribly good. This is no Jane Austen period piece. It shows the gritty, dirty, hardcore underbelly of Britain in the early 1810's. If you like mystery, period pieces, and suspense, you should watch. The episodes are long but there are only 7. I got through them in no time. Now the wait begins for season 2. 😫

What's Trending- Scallop Love

Spring is right around the corner and I'm loving all the girly trends I'm seeing so I thought I'd feature one of my favorite... Scallops! Dressed up or super casual, scallops can be worn to many occasions while giving a feminine touch your outfit. I can't wait to rock these looks. They all scream sweet and fun which is so me. 😉 



I tried on the scallop shorts and really think that I'm going to have to get them. They come in several colors and patterns plus they're on sale now for less than $35! I know this will be a trend you'll definitely be seeing me wearing this spring so stay tuned if you're into as much as I am.

Weekend Wrap Up

I hope this weekend was an enjoyable one for you all! Here it finally felt like winter which was a welcome change. I like the warm weather but I would hate not feeling like we didn't have any winter so the cool weather a nice change. I really enjoy the cold nights and getting to cuddle up in bed under all my covers and not feel like I'm going to have a heat stroke. Who's with me?
Anyway, onto the weekend. We didn't have much planned but I did decide to surprise Pierce with an unplanned date night on Friday. I dropped the kids off with the babysitter and headed to downtown Charleston to do one of my favorite things the Charleston Art Walk. The Charleston Gallery Association hosts four art walks a year where over 40 galleries are open late serving up cheap wine, light hor d'oeuvres, and exquisite art. It's so fun to check out our favorite galleries and explore new ones. Some of my favorite galleries include Aglin Smith Fine Art, Meyer Vogl Gallery, and Robert Lange Studios. I would love to take this and this and this home with but for now I will have to wait.

 After the art walk we tried to go to Minero, but the wait was too long (hopefully we get to try it some time soon), so we decided go to Ms. Rose's. I got the pulled pork which was yummy.

So the first weekend of March was a fun and busy one. I don't know why, but Oliver refuses to nap for me and Pierce, so by 5 on the weekends he is miserable. I think he's such a busy-body and so afraid he's going to miss something that he would rather make himself sick than take a nap. At this point, we've resigned ourselves to this but every weekend we hope and pray that he has a change of heart. Any advice? We could all benefit from Oliver getting weekend naps. I never had this problem with Emmett.

Stripes & Wide Leg Denim

As you can tell from my photos, I am not the most comfortable person in front of the camera. I enjoy taking other people's picture and don't mind giving them tips and direction, but when it comes to having my own photo taken I can use all the help I can get.
Doing this blog and having my photo taken has definitely made me more aware of my awkwardness in front of the camera but it's also helped me better understand what I don't like. I see a lot to criticize but occasionally I like a pose and it makes me a little giddy inside. I also enjoy the shoots because it gives me and Pierce a little time to hang out and he only gripes a little.

March Monthly Resolutions

It’s that time again. Time to check in and be held accountable for my monthly goals. So how did I fare for February? 
Goal 1: Go the the gym 3x week- again…. failed. 
I made it there at least twice a week and I’m sure chasing after Emmett and Ollie have to count as a workout too, but I didn’t get in 3 solid 35 to 45 minute workouts per week. :-(

Goal 2: Get my reading nook completed… successful-ish. 
The area is painted, decor is hung, pillows bought, and books sorted and ready to be shelved. The only thing missing is the bookshelf and I haven’t bought it because I know exactly which one I want but I can’t bring myself to pay full price. As soon as that sucker goes on sale I’m buying it! I want this little nook to be completed so bad because I know it will be so cute and I love that all our books and games will be in one neat, organized space. Just the thought of this makes me so happy.

Goal 3: Date night… failed. 
While we did get lunch out for just the two of us, we did not, however, find the time to book a babysitter and make a night of it. I had intentions to get this done but the weekends got filled up with other plans leaving little time for a night away. This goal isn’t dead… Pierce, I promise we will get a date night on the books!

March Goals:

Goal 1: No soda. 
March 1st is also Ash Wednesday which marks the beginning of Lent. I don’t fast but I do like to give up something for Lent. This year I’ve decided to give up something I enjoy but isn’t good for me... soda. This is going to be difficult because I love a cherry coke. I also considered alcohol, but let’s get real… Lord knows I need a drink every once in while after work and the boys have me at my wit’s end. I knew I would be setting myself up to fail if I picked that. I figured I can handle giving up soda, plus it will be good for my body since I’m trying to get toned for summer. 

Goal 2: Get in the gym for 35 to 45 minutes at least 3 times per week. 
Goodness Gracious, what’s wrong with me! I have to quit making excuses and go. I’m going to keep this on my list, but I have a feeling this is the month I accomplish my goal. 

Goal 3: Get my guest room completed. 
I’ve figured out what I want it to look like but now I need to put in the work to get it done which includes painting the room. I’m not sure what color I want but it definitely needs a fresh coat of paint. The previous owners must not have known how to hang pictures because for every spot where a picture hung there are at least 3 to 4 nail holes in the wall. There so many nail holes in this room it’s ridiculous! This room needs some love and I'm ready to make it a comfortable, relaxing space for our guests. 

Goal 4: Date night with the hubs. 
Repeat: I will find the time and make this happen!

These are my monthly goals. I like putting them on paper because it helps hold me accountable to keep progressing in my life on multiple levels. What are your goals for this month?

On another note, I was gone for a little longer than normal because my little cuddle bug, Ollie, has been sick, and when he doesn't sleep, I don't sleep. So I've had no energy at night to post. On Saturday at 2:30am I had to take him to the emergency room because he was having a very difficult time breathing and it was so scary. Turns out he has pneumonia. Thankfully he is on the mend and seems to be feeling and breathing much better. Say a little pray that he continues to heal. It breaks my heart to see my children in pain.

Shopping for my Boys


As I've mentioned before I have two energetic, lovely little boys. I love them to death and love being a mom to boys but one of the downsides to having boys rather than girls would have to be the clothes. I walk through the children's section and see so many cute options for girls but then I go over to the boy's section and it's so depressing.
The boys section isn't cute or sweet or even handsome. As much as Emmett would love cartoon characters on all of his clothes, I do not. I like for them to be either classic or preppy. Even though it can be difficult, I've rounded up a few looks I think would be handsome on both my boys this spring.
